@Jolenealaska in your reply to cooking.stackexchange.com/questions/79440/… you say 62c is overcooked for you. So just wondering what temperature you do cook or dont consider it to be overcooked at?

1 hour later…
8:04 AM
@JamesWilson I don't know, exactly, I never use a thermometer for fish. I like fish to still have some translucency at the center.

1 hour later…

@ElendilTheTall \o

hi @cindy
how goes it

9:46 AM
@ElendilTheTall Good. Starting out a little tired, but otherwise okay. How about you?

much the same as always

One of us needs to win a huge lottery prize. ;)

too fkn right

:)
I may actually buy a ticket while I'm out today.

got to be in it to win it
as they say
here

10:01 AM
Here, too. Don't know what the current jackpots are but I wouldn't turn any of them down!

heck, £10,000 would make a massive difference
£1000 would be damn handy

Seriously! Working part time I don't make what I used to.

10:20 AM
I don't make much full stop, full time :)

10:35 AM
Need 4 words for Sundial. Letters: H Y P O D E R M I C
1. Between DOME and EMIR
2. Between MEDIC and MERCY
3. Between MODE and MOPE
4. Between MORE and MYOPIC
4 = MORPH
1 = DORM

hmmm
beats me
I'm terrible with anagrams tbh

10:55 AM
I tend to go brain dead. The ones I don't get are either soooooo obvious (can't see the forest for the trees) or something I've never heard of.
What's good for lunch?

what's good?
lots of things
what do I have? leftovers
:)
there's an excellent YouTube series called Binging With Babish
he made Cubanos in his latest one
O.M.G.
he makes food from movies and tv shows
@Stephie o/

11:11 AM

<clumsy fingers>
I want to go home!
But I don't have my car keys.

doh
start walkin'

26 km / 6 km/h = me being home after hubby.
And late for Zumba.

@ElendilTheTall Looks awesome good!

ikr
i wants it
and I'm not even that big a pork fan

11:33 AM
We haven't made them in a good while. Just might show up on the menu this coming weekend. :)

Not hungry at all! I had a yufka for lunch.

a what now

Yufka?

Döner? Turkish street food?

Aah. Döner. :)

11:38 AM
dead man's leg

@ElendilTheTall I watch it. And I can't even eat most of the things he makes. It's excellent

A thin piece of flatbread, filled with meat from a huge spit and veggies.

dead man's leg
:D
@JourneymanGeek I want one of his tattoos
he has a diagram of light passing through a lens
poyfect
ooo
he's making Strudel
I love me some strudel
(excuse the lack of umlaut please @Stephie, ain't nobody got time for that)
the Strudel from Inglorious Bastards
"I recommend it as the centrepiece of your next dinner party or horrifying Nazi brunch" xD

@ElendilTheTall just wondering where you'd try to stuff in an umlaut >.<

I need to watch the pizza episode. It's blocked here

11:53 AM
And I also love Strudel! With a double serving of custard. (Assuming we are talking about sweet strudel, of course.)

Last week I Google translated a recipe for schnitzel. When I took it off of the printer I very quickly scanned over it. When I got to the bottom, something caught my eye - "Remove the schnitzel from Munich.......". >.<

Hi guys!

@Stephie there's non sweet strudel?

Hi Jojo!

Back in a few.

12:00 PM
@Stephie does strudel not have an umlaut?
well then, I retract my apology :D
maybe they add it here to look more authentic :D
@Cindy Munich? pfff
Vienna or bust
@Jolenealaska howdy

@ElendilTheTall I can agree with that. :) But I probably wouldn't be able to remove the schnitzel from Vienna, either. ;)

smuggle it out internally
a schnitzel mule
one thing you must have with schnitzel IMO is lemon juice
and lots of it

Koreans make a schnitzelesque thing too.
here's my girl!

12:19 PM
@JourneymanGeek sure. From salty custard to cabbage filling. Mushrooms, veggies, meat... even sauerkraut.

@Jolenealaska similar to the Japanese tonkatsu

@ElendilTheTall Haven't tried that. I will next time. The recipe I wanted has horseradish and mustard. It goes on one side after the first dredge and before the egg wash. Saw it on BF Delicious Destinations.

@ElendilTheTall yep!

@Cindy that sounds vaguely sacrilegious
pork, flour, egg, breadcrumbs, salt + pepper
lemon juice for squeezing on afterwards
cook it in lard
job done
trust me, I'm half Austro-Hungarian :D

You lost me at lard. I can't stand it. Hubby likes food cooked in it but it gives him a stomach ache.

12:23 PM
Finally someone that will appreciate lard.

well, clarified butter then @Cindy
but you'll need a lot

^^ exactly.

you want it not quite deep enough to cover the meat
but deep enough to be able to kind of flick the fat over the top
@Stephie Schnitzel five o/

@ElendilTheTall Apparently very popular in Munich. Münchner Schnitzel, IIRC.

booo
Wienerschnitzel or nothin'
:D

12:26 PM
@ElendilTheTall Having enough butter is never a problem here. ;)

I had a culinary awakening a few days ago.

@ElendilTheTall That's my favorite, but I like to try new things every now and then.

I made risotto in my Instant Pot, It turned out great but I made too much. I don't like leftover risotto, so I put it in soup.
Happy day!
The creaminess thickened the soup.
It turned OK soup into great soup.

arroncini
is the only thing to do with leftover risotto

Ive never had it.

12:35 PM
what?
go and make it now
what can make risotto better? frying it, of course
get a little cube of mozarella, wrap it in rice, pane it and fry
flargleblargleflarg

@ElendilTheTall Check out Mos Eisley
Chuck E Cheese has a new ad gimmick. Genius.
Safe place to take the kids and let them play while you enjoy the adult menu and free wifi.
I bet that campaign works well for them.

12:51 PM

indeed
Article 50 has been triggered

which means?

we have officially begun the process of leaving

It's frustrating to watch your country go so wrong.
Trump signed the executive order today to reopen the coal mines.

yes
genius
we're going to run out eventually, so let's run out sooner and fuck up the planet while we do it
but hey, my buddies will be marginally richer!

12:56 PM
yep
Come on Russian scandal. Blow up!

c'mon FBI
build that case

tbh the Republican party could be presented with a video of him sucking off Putin while he pisses on the Constitution and wipes his ass with the Stars and Stripes and they still wouldn't do anything

so it seems

Got the last two words for Sundial! :) Medico and moire.
Catch you guys later. I must go play with watches.

1:13 PM
Have fun!

1:25 PM
so
what was the upshot of your doc's appointment @Jolenealaska?

We are looking to start the treatment this early summer.

\o/
did she accept her bitch-slap?

Sort of
She said she never said otherwise.
<shrug>

oh well
all's well that ends well
I saw a segment the other day on cryotherapy for sportspeople
after training they spend 2 minutes in a ridiculously low temperature environment
like, -90C

Although, she did look surprised at the info.

1:32 PM
it kick starts the body's healing systems apparently
and apparently it alleviates MS symptoms too
they're starting to use it in Europe

That doesn't surprise me. Heat terribly exacerbates symptoms.

Here's hoping!
I'm trying an experiment. I'm going to want iced coffee in a few hours, but I forgot to start my concentrate in time.
So, I'm trying the pressure cooker.
This could be phenomenally bad. Or, it could be really good and more concentrated. I'll know in a few hours.

1:57 PM
have you thrown a big switch just in time for the lightning to strike the rod on the roof?
while cackling maniacally?

You've been watching me again!

3 more minutes until I can release pressure
It's venting now - It smells like a Starbucks in here
Everything I know about coffee says this should suck.

sometimes you just have to play fast and loose with the laws of physics jojo

Well, it's not terrible, I can tell that much already.

2:13 PM
then it's already better than Starbucks xD

It needs to steep for a few hours, then I'll put it in the fridge. I'll make up one then, but it gets better after being in the fridge (unstrained) for about 24 hours.
If this works, I see a Q&A on the coffee stack in my near future.
It galls me no end, but that's where it would belong :/

lol
its the chemistry

haha
I'm going to start a mexican food stack just to piss off Jojo
xD

too much heat would cause excessive extraction of bitter compounds and volatilise the oils. In theory.

just play the racism card to any naysayers

2:19 PM
lol
@JourneymanGeek yep, but I have accidentally left the crockpot on overnight a few times making concentrate, and it's always fine.
So this is worth trying, even if only in the name of science.
I wonder what a caffeine analysis would cost.

more than you can afford
miss "I can't wait to buy groceries again"

:D
2 more days!
The link is 404
That wouldn't be what I want anyway

View from the main street of the little town where I work this morning:
It was nice and Jolene is always posting enviable pictures.

Q: How can you measure the caffeine content of a liquid at home?

bound008I saw a question on here about cold brew vs hot brew caffeine content and was wondering what is the easiest (or best) way to measure this at home (if possible)

Pretty!

The trees are blooming.

2:35 PM
We're still a long way away from our first blooms.
> The experiment you link to doesn't mention ethyl acetate. It does however require dichloromethane, sodium sulfate, and a fume hood, which you may or may not have lying around the house.
2 out of 3 ain't bad!
I don't need no stinkin fume hood!
My place smelling like a meth lab would just be icing on the cake.
But Judge!

"JUSGE! I WAS TESTIN MY CAHFFEIN FUR PURITY! ONEST TA GAWD"
(I'm sure you don't sound like that but it was an appropriate accent)

2:53 PM
:D And that white powder on the gram scale? Acesulfame Potassium! And nevermind that plant in the corner.
Amazon is offering free 2 day shipping with a free business account. WooHoo!

3:05 PM

Cya Sweetie!

So, someone lent me this really fancy Macaron book and it has a completely different method, using Italian Meringue...
Is one better than the other? Is there terminology used to differentiate between the two?

4:54 PM
What is the difference in method between French and Italian macarons?
Doesn't French technique require a sauce and Italian require pasta?
Sorry, going back to my cage in the corner now.

5:25 PM
@dlb I believe it has something to do with heated syrup for the Italian method.
Or maybe that was for Italian meringues...
confused

Q: What is the difference in method between French and Italian macarons?

CatijaAccording to this question, there are two different forms of macarons, "French" and "Italian". What is the difference between the French and Italian macaron method - and where does the name originate? I'm guessing it has something to do with how the meringue is made as I've seen some recipes tha...

I figured if I made the sauce/pasta comment here, I would get sneered at, but on the board, might get rotten tomatoes thrown at me in the public square. 40 lashes, and all that. ;)
