I am making banana bread tonight from ATKs recipe.
I think you're right that ATKs recipes can be very "average", but I only see that in savory things. Particularly in ethnic recipes, they play it pretty safe.
I love them for baking though, the very best cheesecake I have ever made was theirs. The very, very, very best brownies I have ever made were theirs.
They walked me (a very novice breadmaker at the time) through ciabatta that turned out great.
Tonight I am making their banana bread, And I have very high hopes.
SAJ would call this extremely overly fussy:
Be sure to use very ripe, heavily speckled (or even black) bananas in this recipe. This recipe can be made using 5 thawed frozen bananas; since they release a lot of liquid naturally, they can bypass the microwaving in step 2 and go directly into the fine-mesh strainer. Do not use a thawed frozen banana in step 4; it will be too soft to slice.
Instead, simply sprinkle the top of the loaf with sugar. The test kitchen’s preferred loaf pan measures 8½ by 4½ inches; if you use a 9 by 5-inch loaf pan, start checking for doneness five minutes earlier than advised in the recipe. The texture is best when the loaf is eaten fresh, but it can be stored (cool completely first), covered tightly with plastic wrap, for up to 3 days.
And If that seemed complicated to me, I could watch the video! The video can actually be very helpful. I loved having it when I made my ciabatta.
I had frozen bananas, so I strained them overnight.
So I skipped the microwave step. Since I always throw overly ripe bananas in the freezer, that's the way I would always do it.
My bread will be much darker, since I fostered my bananas on the counter, they (and the juice) oxidized a lot. The bananas are black on the surface (I had plenty to scrape the worst of the surface away, and the juice is dark brown.
