For the whole experiment I'll be using at most 300mg, of which I will eat very little. I'd have to eat 180 grams to reach the LD50. It is an approved food additive, it'll be fine.

@ElendilTheTall It is not hard to manage avocados so that you're always using ripe ones. As far as brownness, if you prep them every few hours and keep them cold and covered, you've got a few hours. Since my 1st experiment largely established that, I'm mostly interested in longer storage now, particularly freezing.

I do find the freezing issue interesting. I have known people who have had avocado trees. Freezing could be quite nice if you suddenly find yourself with 50lbs of avocado. There is one brand of frozen guacamole around here that's pretty decent. I haven't looked for it yet as it relates to the experiment.
 
it's quite easy to grow an avocado tree from a pit
you just stick some toothpicks in at right angles, then pop it in a jar of water so the water comes about 1/3-1/2 the way up the pit, then just put it in a sunny place.

I was just looking at the website for the frozen guacamole that serves in a pinch. It doesn't have any citrus juice, but it recommends adding some if you plan to keep the package open for more than a few hours. It doesn't have any additives, it's just very well packed. They do some kind of high pressure water thing as a part of manufacturing.

Since I ordered the tiny ziplocs, my plan is to just conpletely stuff them, so there is no room for air.

@Jolenealaska- We made fireweed jelly when I lived in Alaska. It wasn't actually very good. Fireweed is sweet and makes good honey but it doesn't have a very strong or distinctive flavor so jelly from it just tasted sweet and was a little pink.
 
That's funny, I totally agree. I actually only like Fireweed as honey.

I have two sisters and other family that live up there.
We are planning the next family reunion up there including driving. It's going to be expensive so it is planned for two years out.
I do miss the blueberry and raspberry picking.
And having an endless supply of salmon, caribou, and moose at all times.
Those things are all bland and expensive down here.
 
I love the Matanuska Valley, I'm not sure that I've got in in me to endure winters here much longer if I can't out of the city.

A lot of people I know that live up there eventually moved out to Eagle River.
 
I lived for years on mile 80 of the Glenn...Now that's gorgeous.
 
My wife hasn't seen it yet. I'm excited to drive up there with her.

She hates the cold though- the highs in the summer there are still too cold for her. She'll be wearing a sweater.
Our AC in our house is set at 80F and she'll start to be uncomfortable at 76-78.
