The whole thing about presentation is that it makes you so badly want to eat it. My SD card in my camera is toast. I need to buy a new one tomorrow. Oh well. I just made a truffle/mushroom risotto. I served it with sunny-side-up eggs (yolks totally runny) and hot buttered toast. OMG. That's Presentation Squared! (and very yummy!)

I usually wrap them in plastic, keep it tight with a rubber band
keeps them decent for a couple days. but to be honest, limes don't usually last that long in my house
if I have a cut one it goes pretty much right away into a margarita, or a Dark & Stormy, or a gin & tonic...

water only? you could juice them ahead of time and keep them the juice in an airtight container
it's weird, but lime juice actually tastes better several hours after it's juiced
 
Water, ice and a tiny bit of the sweetener I mixed like a mad scientist with my gram scale.

as far as the zest... I guess I'd try simmering them in a thin syrup. all those tasty volatile oils will grab on to sugar pretty nicely
or, if you want some of the bitterness, just slice the limes really thinly and let them hang out in the water for a day

TIP of the day :) Leftover risotto can be very effectively revived the next day by boiling stock (a lot of stock) and stirring in the risotto and more cheese. It's really quite good!
 
Second tip of the day: leftover risotto can be panéd and fried to make arancini, which are fucking amazing
