04:00 - 19:0020:00 - 22:00

4:08 AM
@SAJ14SAJ Well, I am not a mind reader. If you or other regulars feel that I am asking "too many questions" or "too simple/silly questions", then you need to "talk to me", talking "about me" won't help. And this should be done as soon as possible. I am not angry while writing the message but if I am going wrong somewhere then talking to "me" would be the best solution, I think.

4:19 AM
@SAJ14SAJ AH! I looked up the meaning of the word "earnest". freedictionary says " Marked by or showing deep sincerity or seriousness: ". That makes me somewhat happy!
Well, actually, the reason why I ask the baseline questions is that there is no room for error in cooking. It is going to fail if I assume something, and my assumption turns out wrong. You see, the words like "firm" are subjective. I am the only person in my surrounding and family who own an "oven", so I cannot even ask my friends/relatives etc. about anything related to baking.

@AnishaKaul I apologize for any bad feelings I caused you. It started with my wierd sense of humor just as a silly joke about the percentages, since you are by far the most persistent question asker since I have become a regular. I wouldn't answer your questions if I thought they were without value, and I respect your taking on a foreign cooking tradition with gusto. Again, my apologies.

4:39 AM
@SAJ14SAJ No, you don't have to apologize. The bitter fact is that I have had a very bitter experience on another sister site of SO where I used to be a regular. I have deserted that site now. And I didn't wish the same thing to be repeated here, so was serious (and not angry) when I said that if I am going wrong somewhere then talking to me as soon as possible would be the best choice. :)

Hi!
I totally understand your doubts about "firm".
Recipes are often unclear unless you already knows how to make the dish.
I would be unsure too if I read that in a recipe.

@Cerberus Hey Cerb.

Hiya!
I have good news, although it probably means nothing to you: Spain is going to the European Court of Justice over the evil European Patent Court.
Yay!

I don't have the background on why that is important.

(You already have such a patent court, and behold the countless patent trolls...)

4:44 AM
Its hard to imagine European patent law is as stupidly messed up as US patent law.

Not yet...but jurisprudence / case law can play a big part in it.
Our patent laws are of varying stupidity, though few are as bad as yours has become. But most of that happened after you got your dedicated court.

I don't think our laws are so awful, as the granting of patents where an "expert" reviewer gets maybe three minutes to review, and doesn't deeply understand the subject areas means we grant a lot of really, really, really stupid patents.

Oh, sure: patent offices are a bit part of the problem; no doubt ours are equally fault. But normal courts should and could curb the excesses.
Whereas a specialised court is inclined to let such excesses happen.
I won't bother you with a link to this article...
In short: I am moderately happy!

Its almost 1:00 AM. I am not up to any heavy research :-)

I know, I know.

4:48 AM
My research skills today have proven profoundly unhelpful.

Suffice it to say that a court whose sole existence depends on patents, and who will probably be given a larger and larger budget as it deals with more patent cases, is more likely to increase the importance and strength of patents; and, if they only speak to patent lawyers all day long, whose existence depends on patents even more, the effect is even worse.

I tried to research answers for this one

Q: Any cheap ways to clean restaurant stainless steel fridge?

Pandastewso I know they have antibacterial solution to clean, but what can I say its expensive. Currently we use water+soap solution but its not working well. I am looking to clean the inside of fridge/freezer.

Oh...

I couldn't find anything.
Any Circuit court can hear a patent case in principal.

Yeah, but it's always about companies, and they usually appeal.

4:50 AM
We probably have suffiicent checks and balances on the courts themselves becoming self perpetuating. But in my mind, the problems lie in patent mangement and issuing. Patenting genes and algorithms is, to coin a term, patently rediculous.

And the appeals court could be the place where the excesses are curved.
@SAJ14SAJ Oh, I absolutely agree. But patent excesses are to a considerable extent about the weakest link: if the appeals courts kill off the excesses, the problem will remain manageable.
@SAJ14SAJ How about...soda?
I would probably use bleach too.

I tried that one too. Failed spectacularly.

Oh.
To be honest, I rarely use it.

I have a whole draft answer written, that mentions the bleach thing. But it doesn't answer the question. And bleach is for sanitization, not cleaning.
Unanswered questions offend my delicate sensibilities

I would personally use one of those metal pan-scrubbing thingies, but that is at least in theory bad for the metal in the fridge, scratches.

4:53 AM
I got the feulletines one :-) That one was tricky.

@SAJ14SAJ Not true!
Bleach can be great for cleaning.
It destroys all kinds of stuff.
@SAJ14SAJ The who?
Dough?

At the concentrations used in this context, its not a cleaning agent.

Use high concentrations. Use pure bleach.

A: How do you make Paillets Feuilletine?

SAJ14SAJAfter considerable searching, I found this tidbit buried in an an old Callebaut product catalog: Pailleté feuilletine is broken up pieces of crepes dentelles. This video from Bryan Talbot shows how to prepare crepes dentelles in considerable detail. He indicates that he had to reverse engineer...

That isn't allowed either, in a professional enviornment. One, pure is dangerous. Two, at anything above a certain threshold, rinsing in sufficient potable water is required.

@SAJ14SAJ See, I have never seen those or even heard of them.
But shouldn't it be feuilletines?
@SAJ14SAJ Dangerous...naaahh. You just have to be careful.

4:59 AM
I never had either. And my French isn't good enough to answer that. Looks like the plural got moved o the first word.

I use pure bleach all the time.

It is dangerous, amonia in an enclosed environment is bad news....

Unless it means à la cuisine feuilletine, like boeuf bourguignonne (extremely unlikely), I believe it should be plural.

Je n'ai pas soin on where the proper plural is in French :-) I am happy to have tracked down the culinary facts.

@SAJ14SAJ You just have to be a little bit careful and stop to use a fan after a while.

5:02 AM
In the fridge cleaning question it sounds like they are working in a commercial environment, not a home one. So the would have to comply with the local codes.
Welcome back @AnishaKaul

Okay, it seems pailleté feuilletine is just the name of the dough. So it has no plural.
And no s.

Its more a batter. Its quite liquid.

OK.
You have made it?

No, never.

Oh.
On second thought, I may have eaten it in the form of cookie-like crunchy things.

5:06 AM
Yeah, I think they are in a lot candies.

A bit like galette cookies.

Very similar, it would seem. Also a more caramelized cousin of the tuile.

I...only know the textile tuile.
Or is that spelled differently...
moans

Tuile came up in this question.
2
A: Looking for a way to make a cone shaped cookie

SAJ14SAJWith the stipulation that you will need a cone form to roll the cookies on, I think the ideal cookie base for your application is the tuile. You would have to adjust the flavorings, probably. You can find many recipes by googling, such as this one from King Arthur Flour. Here is an example of ...

Wow.
We're actually talking about cooking!

5:08 AM
Don't tell anyone!

Tell who what?
whistles

If we keep talking about food, though, this could become a cooking chat. We have to be careful.

God, no, never!
Incidentally, I have to go to bed.
I could still get 6 hours of sleep.

I had thought you had just gotten up!
Bon soir.

Naaah. Get up at 7 at night?
Bonne soirée!

5:13 AM
Its not about 6:00 AMwhere you live?

7 am.

Well, then you should rush to bed!

Good night!

10 hours later…
3:25 PM
hi
Any mods here?

@Mien I'm not sure if having multiple users is allowed. Flag the new answer from "jay" and put in flag reason other
then you can add a note about suspected duplicate account

Okay, thanks.
Done :)

You can't flag a user directly, unfortunately, so you have to flag one of their questions or answers instead...
One of the many items on the long list of bugs SE is never going to fix

3:41 PM
I could swear I read somewhere that having more than one account is permitted, unless it is being used to skirt other norms.

Jay
Gasp, this man is ruining my reputation!
0
A: Chicken smells like eggs

JayIt's been 23 hours since I ate the chicken that smelt like eggs and I'm fine. I did not had the shits or anything like that, and I'm not clucking or spitting feathers and that. If anything, I'm feeling as fresh as ever. And yes, that's just my experience on the smelly chicken malarky. I feel like...

@SAJ14SAJ It may be, e.g., I can see someone wanting a separate work and personal account

3:59 PM
@jay You are young, you have lots of time to make up for it!

Jay
Is there a reason why stackexchange doesn't have a unique username like everywhere else

No idea why they decided to do it that way... Of course, I doubt you would have been able to get "Jay" had they.

Jay
yea but it wouldnt have mattered. i would have chosen something else lol
my god i have to go through a lot of damn hoops to get visual studio for free

Is the pirate bay down in your part of the world? :-P
[Not that I've actually ever pirated VS... Not much use for it on Linux]

Jay
lol no its the legit way

4:03 PM
Hmmm, when did they start giving it away?

Jay
you can get it for free for 6 months from Dreamspark if you do a bunch of verification crap to insure you are a student
you have to reverify every 6 months

I thought they gave away VS Express edition for free regardless of university status.
Of course I am smugly usign the top level professional edition from my company, so what do I know?

Jay
express is free but who wants to use express...

What's wrong with it for the price?

@Jay Ah, get you hooked on it, so they can sell you it when you have money

Jay
4:04 PM
nothing but why use express when i can use 2012 professional

Evidently there are hoops.
You just said.

Jay
@derobert indeed... gotta hook us whil we are young hehe
@SAJ14SAJ its not THAT bad lol

Why use VS when you can use gcc or llvm and vim? :-P

Jay
im just being a little bitch about it
@derobert because a specific class is telling us to do it that way

I just did my income taxes last night, so I may randomly bite folks heads off. Just a fair warning.

Jay
4:06 PM
we need to use microsoft robotic sdk for the class
if that is you biting someone's head off then i want to see you kill someone. What do you do, hug them to death?

@Jay Oh, I haven't done it yet. Its only fair to give warning before the act, right?

Jay
ah ok lol
i thought it was a apologetic postwarning

@derobert I thought tax rates in the US are pretty low?

@Mien It's not the amount of money that bugs me, but the bloody pointless complexity.

Jay
yea its like trying to lick your own butthole... pretty damn impossible to do
i did it like last month

4:10 PM
@derobert Oh, here it's pretty automatic, luckily.

@Mien there have been proposals to make it much more automatic here. But Intuit (makers of Turbotax) hired lobbyists to take care of that!

Jay
lol
yea there are way too many tax preparer companies out there for that to go through easily
i personally use H&R

Wouldn't it be better if it's automatic?
Why would Intuit try to prevent this?

@Mien Because then they'd not sell as many copies of Turbotax every year

4:18 PM
what is the word for raw materials when it comes to food?

Ingredients.

ah as simple as that ty

Yeah, sure not everything is complicated :-)

I dont know what Turbotax is :P

@Mien And so you should be glad, it is a local terror, specific to US tax law.

4:26 PM
@Mien Its a program that helps you fill out the tax forms. That's the level of complexity in our tax code, that you often buy software to help fill out all but the simplest of tax returns.
I wonder how much it actually costs to hire an accountant to take care of it... Tempting....

Jay
@derobert what the max you are willing to shell out for it yearly?
to get rid of the headache lol
im most likely going to do it when i graduate and have a job

@Jay Not sure. Part of the reason I've never done it.

@derobert Banks help for free to fill in the taxes.
There is also a free hotline.
Well, "free", since we pay a lot of taxes :D

@Mien Oooh! We have a free hotline for questions about filling out your taxes. We even occasionally do research into how accurate answers they give. I think they're right about half the time these days.

lol

Jay
4:38 PM
@derobert a bit better than weather forcast

@Jay Hah, at least the snow forecast.

None of those programs or services help make a really good hamburger. I think that is a far more important issue. For example, the contentious question of salting in advance or right when cooking begins.

Jay
@SAJ14SAJ for me there is maybe a difference of less than a minute

Hmmm, I bought a can of chickpeas for the first time in my life and I don't know what to do with them. Falafel, hummus, just eat them as is?

@Mien Cold?

Jay
4:44 PM
@Mien i love throwing it on top of greens
makes for yummy protein in salads

@Jay But the question is, is that less than a minute optimal?

Do they replace potatoes or meat? :P

@Mien no.

Jay
@SAJ14SAJ if its burgers i dont care. id care more if it was a piece of sirloin or fillet mignon

I know that they are legumes, but we treat them as veggies here.

4:45 PM
Filet is over priced.... I go for a good ny strip or my own personal favorite, rib eye.

Jay
@Mien well yea its generally a veggie here too but it has protein in it

@Mien In that case, they replace mung beans and broccoli.

I have broccoli on the menu today :)

Jay
@SAJ14SAJ indeed

Then you don't need your can of chickpeas.

4:46 PM
@SAJ14SAJ Add feta, mint, tomato, orange juice, some oriental spices.

It's the first time I hear of mung beans.

@Cerberus But never, never cilantro. Cilantro is evil. So is Chinese Parsley. And Coriander.

@SAJ14SAJ No, I don't, but I do want to try it this week.

@Sobachatina Hey.

Good morning.

4:47 PM
@SAJ14SAJ Evil in general?

Or afternoon as the case may be.

Evening!

@SAJ14SAJ What's wrong with cilantro?

@Cerberus Evil in general, and also every possible specific manner.

My mother agrees.
But I have come to like coriander (what you call cilantro: the green leaves).

4:48 PM
@derobert We just reviewed that. Its evil. And also tastes like soap.

I'm still iffy about cumin.

@SAJ14SAJ Aren't they all the say?

It does taste a bit like soap.

@Cerberus I love cumin!
@Cerberus It does to some people, genetically.

Cumin is magnificent, although it can be overdone.

4:48 PM
hi @Sobachatina

There are dishes I like that have cumin, Indian stuff. But too much cumin is bad...and mainly cumin too.

There should be mandatory Coriander/Cilantro disclosure laws.

Wait.
You like cumin??

@SAJ14SAJ I think you all in MD are just weird, cilantro around here isn't evil.

@Mien Good day, m'lady. I trust I find you well this fine spring day.

4:49 PM
How is cumin not very much like coriander?
I am perplexed.

You should drive across the border and pick up some non-evil VA cilantro.

@Sobachatina Wow. I'm fine, yes, thanks for asking. How are you?

Even though it probably all comes from CA :-P

You should all stop your whining. Cumin, coriander, and cilantro all taste perfectly fine.
@Mien There has been a terrible tragedy.

@derobert Its evil everywhere. Jsut because some of you are collaborators doesn't change that!!! :-)

4:50 PM
@Sobachatina Oh, what happened?

@Cerberus Cumin does not taste like soap.

Yesterday there was an electrical fire in the chicken coop and 8 baby chicks perished.

@derobert Its also evil in VA.

There were also some garden tools destroyed but the babies are the hard part.

@SAJ14SAJ I suppose not...but it does take like...you know.

4:50 PM
We caught it before any major damage was done to the coop.

@Sobachatina Sorry.

Aww.

@Sobachatina Now you need to find something to do with 8 smoked baby chickens?

@derobert Too soon.

Jay
too much cumin makes a dish smell like sweat

4:51 PM
@derobert Be nice!

We can joke about it next week.

Jay
really bad sweat

@derobert Burned-plastic smoke, nah.

@Sobachatina Oh :(

I'm sorry for your chicks. cluck

Jay
4:51 PM
oh no dead babies!

For some reason I am okay slaughtering adult chickens now but when the babies die it is still hard.

@Sobachatina Sorry, you weren't here when I gave my warning, I just finished my income taxes last night :-(

wonders about tiny feathers on a couple of Cerberus' mouths

It was the fox!

Jay
on a related note, i underestimated the broiler and totally killed my pizza yesterday

4:52 PM
We should declare it Electrical Safety Week.

@Jay So it's burning week. Yuck.
Or that.
You Americans with your euphemisms!

@Jay You broiled a pizza? I know Kenki Alt recommends that, but it seems just... wierd... to me.

@Cerberus Which one? You think Jay actually murdered a pizza?

And make sure we finally apply the electrical tape to the wire that's been sitting over there, sparking for months.

Jay
@SAJ14SAJ i baked it and wanted to broil a tiny bit to give it a crispy finish

4:53 PM
@Jay You know broilers are radiative, and as an EE you know the flux decreases with the square of the distance :-)

Jay
but i got distracted and crispy turned to charcoal

@Sobachatina Haha no, I meant Derobert's week versus mine.

@Jay A sad end for any pizza.

Jay
@SAJ14SAJ im CE not EE

Ohh flux...

4:54 PM
@jay Never mind, for a minute I thought you were someone :-)

@SAJ14SAJ I've broiled pizza, it does work to melt the top quickly. But normally I just heat the oven with a stone and cast iron pizza pan in it to obscene

I remember the left-hand rule!

Jay
@SAJ14SAJ psst

@SAJ14SAJ CE must be something, it gets stamped on the bottom of all kinds of gadgets!

You catch the flux in the palm of your hand, your 4 fingers point towards the current, and your thumb will be the force?
Or how did it work again?

4:55 PM
@Cerberus It doesn't work with paws.

Oh, I use a human hand.
Or I call up my friend Thing.

And if you need to temporarily store up some flux what do you use??

All together now: A FLUX CAPACITOR!!!
21 jigawatts worth!

@SAJ14SAJ You found a supplier? Everyone I've tried has been sold out.

@derobert EVeryone knows you have to build it your self (assuming you are a mad scientist), or fall in with a mad scientist to build it for you.

4:59 PM
@SAJ14SAJ You know how hard it is to find a reliable mad scientist these days?

Stupid H-index...

@derobert Muhahhahahhaahhahaahhahahahahhahahhahhhhaahhaha,

@SAJ14SAJ Considering your stance on modernist cuisine, you couldn't possibly be a mad scientist.

@derobert Madness can be restricted to specific domains. One does not have to be universally mad.
@derobert Plus, I don't think the modernists quite qualify for "mad." Silly, yes. Eccentric, certainly. Whole-lotta-work-for-not-much-return? Yes. But we don't have an adjective for that.

@SAJ14SAJ Well, I suppose. You're in health care, does that mean you do traditional Mary Shelley-style mad science?

5:03 PM
@derobert I am in health care, yes, but Health IT. So its more Colossus type of mad science, with a side of Michael Chrichton novel plots.

@SAJ14SAJ I'm pretty sure that a modernist-cuisine-style mad scientist probably does things like practice reverse spherification on the diners.

@derobert On the diners would certainly quality as silly-mad, yes :-) I mean, they wouldn't taste very food.
good.

@SAJ14SAJ but, would they look neat on the plate? That's all that matters, right? :-P

Kind of an icky red-biege color I would imagine.

Hmmm, I'm not sure, would the mad scientist purée them first?

5:07 PM
I was assuming dissolve.

@SAJ14SAJ I was figuring he/she'd just coat them in some transparent calcium-rich liquid (held in place with xanthan gum, no doubt), then spherify them whole.

Mad scientists are partial to agar agar/xanthum mixes for the synergy.
And they prefer bite sized spheres as a group, generally.

Hmmm, so they'd first have to hit the diners with a shrink-ray, I guess, but that's well within your average mad scientist's abilities.

Except computer mad scientists. We prefer byte sized. The craziest go for bit-sized, but I think making tiny spheres and calling them "caviar" is silly, so we are back where we started.
Shrink rays are so 1950s.
I would only use my shrink ray in an ironic sense.

Hey, the dissolve-in-solvent trick you suggested isn't even 1950's.

5:11 PM
No, its a classic for all ages :-)
The modernist approach would be to freeze the diners with LN2, I think, then take a cryosaw to slice them into 8 MM pieces, for encapsulation and spherification. Again, so much more work than a big vat of acid. Its silly, and it denies the obvious aesthic brilliance of the classic trope. Those things are classic for a reason!

Maybe what's needed, then, is to first subject the diners to ultrasonic homogenization, then use molds & food coloring to make them into little people, then spherification.

Interesting approach.
A little baroque.
Perhaps you are more a mad artists.

Indeed, that would be a mad artist-mad scientist crossover.

We have scared everyone else away. Even Cerb. That is... muhahahhaahhahhahahhahahaha!

Indeed! Now we just need a B-rate horror director, and we're set.

5:15 PM
Evidently. But don't you become one of those by saing "I am directing a horror movie" and POOF! You are a b-rated horror director?
We can hire Elvira.

@SAJ14SAJ Not sure, you might have to also find someone to give you at least enough money to rent a camera first.
@SAJ14SAJ As long as we stay away from Shyamalan, I'm happy

I cannot even say that so we are safe.
Also, I don't approve of anything JJ Abrhams have done. But he can only dream of being as good as a b-movie horror director.

ouch

His lens flare device should be crushed.
And what he did to Star Trek. The horror. The horror.

@Cerberus You meant in a salad?

5:21 PM
@SAJ14SAJ Hmmm, IMDB says he wore a funny hat in the pre-production of Shrek. That might be the only good film on the list.

@Mien Ehh you could call it a salad?

Shrek was animated.

But it's just the ingredients I mentioned, no lettuce.

@SAJ14SAJ Yep. IMDB says "Shrek (propellerhead: Los Angeles pre-production - as Jeffrey Abrams) "

You can have a salad with no letus.

5:22 PM
It is my favourite dish with checkpeas.

So I conclude what he did is wear a funny hat around the office, to keep everyone else entertained.

@SAJ14SAJ Yes, but she asked in a way that seemed to include lettuce.
Hence "ehh".

Tuna salad generally has no lettuce.

@Cerberus I don't know what you mean otherwise :P

@Mien You just put the ingredients I mentioned in a bowl, and you're done! You now have a delicious dish.
@SAJ14SAJ Sure, just like lots of other salads.

5:24 PM
Dog style cooking! I didn't know you needed bowl.

I was trying to anthromorphise.

@Cerberus Hmmm, I think that's a boring dish :P
Also, not enough as a meal. I only have one can for two.

Thanks.

Hah, they come back the second we're done with mad science ideas. Guess we really did scare them away.
Either that, or were in danger of stumbling upon their own evil plans.

@derobert Its a gift.

5:26 PM
@Cerberus I meant no offense.

@derobert Cerb just wants everyone dead. Dare I say it, I suspect that Mien is... I don't know a polite word, I will just say it.... just.... nice.

No worries.

I know that is a horrible thing to say about someone.

Belgian Waffle, this is Hellhound. The chickpeas are in the bowl, I repeat, the chickpeas are in the bowl.
Over.

I'm just nice1??

5:27 PM
@Mien Sorry.

@Mien Certainly not to mushrooms. At least not without italics.

She deserved it. She'll get over it. Eventually.

Hellhound, the chickpeas are not in the bowl, I repeat, they are NOT in the bowl. Over.
@derobert I prepared them in two ways Friday.

Yes, Mien is very nice to mushrooms. That's for sure.
Italics fix everything!

I didn't know there was such a thing as a myconophile. We might have to take back the nice.

5:30 PM
Waffle, hou je waffel, over.
Do you say waffel?

Come to think of it, why is the penguin-chef missing an arm? Seems to have suffered grievous injury.
... the missing arm is clear!

his real name is Kenny?

@SAJ14SAJ Donno. Kenny seems to respawn with all body parts intact.

@derobert But we never witness the process. Perhaps this is an intermediate stage.

@SAJ14SAJ No, they actually showed it finally...

5:33 PM
I haven't seen the show since about season 10 or so.

S14, E13 apparently

That would explain why I haven't seen it.

@Cerberus Nope :P

Those three episodes are awesome, especially if you've seen My Neighbor Totoro.

I mean, we know the word, but we never use it.

5:34 PM
I haven't... I don't really go to the movies.

@SAJ14SAJ Er?

@Mien US Pop culture reference.

I have the feeling I missed some things.

@Mien Ah OK. What words do you have for waffel/snoet/muil/bek/mik?

Its from a show named South Park, which is still going I think. Crude, funny, irrevereent, but ultimately not very important.

5:37 PM
@Cerberus Several. I'll say them later. I'm busy cooking.
@SAJ14SAJ Ah yes.

Netflix claims it S14E11. And you can get My Neighbor Totoro on DVD or blueray :-P

Everybody knows Southpark, though I have only seen it a couple of tines.
@Mien OK.

Jay
i love south park lol

To be honest, I never really liked it.
Some jokes were funny.

Also, after My Neighbor Totoro you have to watch Something Wicked This Way Comes.

Jay
5:40 PM
