Oh yeah, those too. I got a flexible air fryer, so I can remove the barrier in the drawer to make one big drawer. I can roast a large whole chicken and 4 big potatoes at the same time.

I usually do olive oil and some sea salt, keeping it simple. But I sometimes do a dry rub of salt, paprika and ground ginger. So many possibilities!

Crispy chicken skin is one of the joys of life, isn't it? Not as good as pork crackling but much easier to achieve. I want to try wings next.

It was too dry and the leaves all got crunchy. The hearts were delicious but didn't get the pleasure of the leaves. Next time I'll put water in the bottom and steam-roast them.

I have an Ikea portable which I got used off ebay, and it's so far done everything I wanted, but then again I'm not trying to do anything subtle. It's had the granularity to keep things at the right level of simmer, which is a problem area for many.

A turntable in a microwave is an important feature for me @Tinkeringbell, I'll have to think about that. I've use microwaves at work (the office kitchen, I don't work in a restaurant) which are professional models, none of them have a turntable but man do they nuke things in a hurry! So maybe not critical.

In my kitchen I have 2 built-in ovens, on a countertop I have my microwave, toaster, mixer, etc. I'm thinking about adding an air fryer, but it's going to be a bit of a squeeze on my counter. As I have 2 ovens I'm thinking of replacing my old, needing replacement oven with a built-in combination microwave/oven. That way I'll have 1 very good high capacity oven, one combi microwave oven and an air fryer.

I'm looking to replace my old oven and I'm thinking of buying one with a steam function. However, I'm not sure if they are gimmicks or not. I'm thinking it may be good for bread baking instead of putting a pan in the bottom. Does anyone have any experiences with them?

They were all friends @rumtscho, my US family is all still in the states. I introduced them to Thanksgiving a few years ago and it's become their tradition as well now. They told me they all look forward to it, which made all the hard work worthwhile!

Yes, cilantro is coriander, I don't know why I got that wrong in my head. Either way grinding them up is best, especially for a finishing spice. You could crush them but then you're going to gat coriander seed fragments which get stuck in your teeth. Not good.

No, cilantro is cumin. Cumin seed is oblong, Coriander is round. Maybe they mislabeled.

Garam masala with whole seeds @Tinkeringbell? That's very strange to me, garam masala is supposed to be a finishing spice, added towards the end of cooking, so it needs to be finely ground for the flavors to come out. Cumin seeds (I've never heard of it called cilantro seed but it's the same thing) can be toasted at the beginning of cooking and they'll soften over a long cooking period, but they shouldn't be added at the end. My suggestion is grind them up.

I did almost all myself @Tinkeringbell, I split it over a couple of days. Friday I made the mashed potatoes, gravy, beets and pumpkin pie, so Saturday I only had the turkey and stuffing to do. My son made a really good pecan pie. My guests bought dishes too, so there was more than just what I made. Setup and cleanup-wise the whole family pitched in.

I kept the carcass and did something different with it today, I picked it clean, boiled it for a couple of hours, strained, then added some miso, soy and a bit of concentrated stock. Added vegetables and ramen noodles for some leftover turkey ramen! It came out great.

I've managed to bring a little bit of the US to the UK by having an annual Thanksgiving dinner, although I have to do it on a weekend as we don't get Thursday off. I served 25 people, 7 of which were starving teenagers! I made a 11.5kg (25lb) turkey, stuffing, 5kg (12lb) of mashed potatoes, 2 liters of gravy, roasted beets from the garden, and pumpkin pie! The turkey was gigantic, but we only had a few scraps left afterwards.
