I've looked more deeply into it and it seems to have to do with a macOS feature "Private Wi-Fi address", while that seems to name only MAC addresses, it seems it does more than that, as if I deactivate that from "fixed" to "off" the DHCP name will change from "Mac" to "Dans-MBP" which is still not my hostname ("Dans-Macbook-Pro") but nonetheless

My problem was that I want for macOS as the DHCP client to send option 12 as my hostname and not just as a generic name "Mac"

I don't know exactly where the conversation got split, but the conclusion was wrong:
So about the DHCP, it does matter what hostname the client sends in it's request, namely, whatever hostname the client sends to the router, the router will honor it.
