Kenji apparently tested something about using something as a substitute and he said it wasn't perfect but would do in a pinch... now I just need to find what that something is.

I just get crazy into it, is all. I have a bit of a beer brewing background... I get all wrapped up in questions like "What if I started capturing wild yeast" and "Can I really commit to keeping a live culture in my house.... won't I let it die and then be really mad at myself."
Bread just doesn't exist in small town America. I feel very strongly about trying to fix that.
I have like a black & white personality sometimes and I fixate.
Not helpful all the time

Its tastier but mom dosen't want to commit to pet yeast.
 
It's just a whole thing... and then I'll have bread around all the time. Which sounds great but it won't be good for me diet/temptation-wise

We had a breadmaker as a kid. So handy.
I've been trying to find something I could use for a Cuban sandwich or like a philly cheese steak. It's just such a bread desert. Every bread in the grocery store is the same just formed into different shapes.
 
I never had one.
