8:00 PM
This site is better to use for cooking conversions.

well, it's slightly different between the two
ah thank you :)
I'll bookmark that right away
you stupid Americans :(
;-)

@hobodave I agree that frosting ratio doesn't have to be precise for structural reasons.

it's a difference of 300 grams :)
that's quite a lot

But I've had a wrong conversion make my recipes unbearably sweet
@Mien, that's just the case I meant

yes
but maybe it adds a bit of everything, so the ratio would be more or less the same, but I would have 4868486 cupcakes

8:03 PM
Would any of you put parmesan in chicken soup?

I would try it in my cup, not in the whole pot
is it any good?

@Mien I don't know yet, it is in the final phases of cooking.
I just put in the herbs.
Lovely fresh garden herbs at that. Mmmm.

I put it in zucchini soup a couple of days ago and it was good
but a bit heavy

I have zucchini in the soup too.
Onions, chicken, zucchini and red peppers. And the herbs. Without thickening.
I am afraid that it will clash with the chicken. But I have this piece of parmesan which I should use up.

isn't 'chicken parmezan' a famous dish?

8:08 PM
I am not so sure. There are chicken breast picata, breaded in grated hard cheese instead of breadcrumbs.

chicken parm is pretty popular here

But it tastes different from boiled chicken.
I am wary to view something as good taste just because it is popular in the USA.
It is more of a 50/50 chance in my experience.
The chicken parm recipes I found were for breasts. Now they can use the additional taste.
Mmmm, the soup is really good.
But it tastes better with feta than with parmesan.
Now I have to decide if I want to keep it pure or smother it in feta.

could you e-mail me some?

@Mien I hope you don't mean that I should mail you chicken parm recipes, because I heard of the dish for the first time 5 min ago and googled it.

No, I meant some soup.
I really want some :p

8:18 PM
@Mien, I could e-mail you a picture of it, but I don't think that'll help.

Don't you dare!

Hmm, it looks that since I put something into my rumbling belly, I am getting more considerate. Nice to know.
@Mien, you're going to have some nice cupcakes soon anyway.
The emptier your stomach is, the more cupcakes can fit inside.

It's called emo-eating :)
I hope I can make some this weekend
It depends on whether I can find those crazy American ingredients or not.

Oh, I thought you were making them now. Because you are already converting etc.
what crazy ingredients?

No :) I just don't want to study
maply syrup (but I think I'll find that)
walnuts (normally yes, otherwise, I'll use some old ones of our own tree)
vegetable shortening
and I should use whole milk, but I think I'll use semi-skimmed

8:41 PM
@Mien maple syrup is quite common here, most bigger supermarkets have it, only the discounters don't. So probably you will find it too.

Yes, I think so as well :)
I will buy golden syrup too if I find that

Just make sure to get the grade C stuff, the lighter ones don't have enough aroma for me. If you are reduced to using grade A, you can take sugar syrup without anybody noticing the difference
Not on a pancake, but as a baking ingredient, the light syrups are just too subtle.
I don't see a point in using shortening (my feelings about it are similar to the feelings about processed cheese) but if you really don't find it, there is always palm fat.
And I can't believe that whole milk can be that rare in Belgium.

for the maple or the golden?
it's not rare
but we don't use it
here at home I mean

@Mien, for the maple. I don't think there is much difference between types of golden syrup.

I don't think it'll make a big difference

8:47 PM
The milk fat content isn't important in baking, it only gets critical in custards and ice cream.

yeah
and it's a good 300ml for 24 cupcakes
I would make only 6 or so for a try out

But as for using milk at home, I don't understand how you can leave out the tasty stuff ;)

I don't know :p
I've drank semi-skimmed all my life
so I'm used to that flavour

Isn't 6 too small a batch to be worth the work and cleaning up the kitchen?

could be 12, I'll see :)

8:50 PM
I always make 12er batches, even though it takes me half a week to eat them.

but 24 is a bit much :p

It is the first day I am eating something different than pie.

:D

I started Friday evening and had nothing else for the weekend.

poor you
you should have a cat

8:51 PM
It is a bit of a problem, eating alone and wanting to try out recipes at 5000 calories per batch.
I'd love having a cat.

Yes I totally understand your problem :p

(Especially if the litter can take care of itself).

I bring my bf from time to time something I baked
but I want him to be fat :p
so I give most of the stuff to my dad

On the other hand, I wouldn't feed my tarta grandiosa with 20 Eur per kg blackkurrants to a cat.

I think the cat would lick around the blackcurrants, so you can have them

8:53 PM
@Mien, watch your writing. This sounds almost as if you want your dad to be fat.

or are they smashed?

No, they are whole.
But I must confess that if my dad is around, he ends up eating the biggest part of it too.
Not because I am fattiening him, but because he eats so much more than anybody else in the family

he's old enough to know what to eat and what not ;)
test $X$

Some fathers are old enough, others melt like 4-year-olds when they see a sweet. And claim that they can't taste anything if they have less than 3 tablespoonfuls of food in their mouth at a time.

:D

9:00 PM
@Mien I think that there was some kind of Markdown tutorial in the meta.SO faq

chicken breast is overrated

Oh, nice, we still have an American online

I buy boneless thighs like they're going out of style

(did you go skulking when I sad bad things about American taste and @Mien about American volume measuring?)
But now I can ask: What are baby greens?
@hobodave, I like both, for different applications.
But I don't trust myself near a chicken breast without a thermometer, they're so easy to ruin.

@rumtscho they're young greens
baby spinach is really common, also arugula, Bibb, red-leaf, and oak-leaf lettuces
though they are often sold here in a "baby mixed greens" bag

9:05 PM
"greens"
as in
Alliance '90/The Greens () is a green political party in Germany, formed from the merger of the German Green Party and Alliance 90 in 1993. Its leaders are Claudia Roth and Cem Özdemir. In the 2009 federal elections, the party won 10.7% of the votes and 68 out of 622 seats in the Bundestag. Former names and variants in the states The party used to be called The Greens since its foundation in 1980 until its unification with Alliance '90 in 1993. The West Berlin state branch of The Greens used to be called Alternative Liste, or precisely, Alternative Liste für Demokratie und Umweltschutz...

red-leaf is a green?
:p

"bibb, red-leaf, and oak-leaf lettuces"

OK. Because I hadn't heard about "greens" before. I mean, practicaly every vegetable is green.

@Mien they're all lettuces. bite
@rumtscho very common term here, it's any leafy green

I just say "letuces" in this case. Or "salads", which of course makes half the people think I am talking of the dish.

9:07 PM
spinach isn't a lettuce! bites back

but spinach is not a lettuce, nor is kale, or mustard greens or turnip greens
nor is swiss chard

I don't understand those words :(
you win

Um, I don't use them in a common application

lol
I do

People are really eating turnip greens?

9:08 PM
I had some last night

Last Christmas, I had forgotten that everything closes at noon on the 24.12.
And stays closed until the 27th.
So I worked until 14:30 on the 24th and went shopping, the fridge was totally empty because of the "end of year" work rush
After a long search, I found an Asian grocery shop which was open until 16:00. But they didn't have fresh vegetables. And nothing dairy. And I hate ramen.

lol

What is so special about ramen btw?

I got something more or less eatable (mungo beans I think) and went to the "fresh produce" fridge, which practically only housed herbs
And there were these big leaves

@Mien good ramen is pretty amazing

9:12 PM
It's like a noodle soup? Or what?
I only know it from Naruto :p

yes

I didn't dare asking what they are. I took them home, christened them "chard", and cooked them with coconut milk and lots of nutmeg for a Christmas meal.

and how did they turned out, @rumtscho?

But I always suspected that they were turnip leaves. Adult ones, not baby greens.

@Mien I don't know what that is, but I assume it translates to "I am a nerd". :)

9:13 PM
It's an anime series

I don't think I've ever see turnip greens sold alone
@Mien I know that much, hence the nerd jab. :)

but you guys don't watch TV because it's a weightgaining device and something else.
you are way more nerdy than me!

prove it

with all your python scripts

@Mien, it was lousy for a celebration, but I am not that big into Christmas anyway. But I had spiced them enough not to notice the taste, just in case. So they just tasted of cellulose with nutmeg.

9:14 PM
I sit at my computer and ooze coolness
2

@rumtscho, what did you eat the 25th en 26th? :-/
you have a mac

I usually have greens with balsamic vinegar

you are a developer
you understood that joke

@Mien which means I am hip

@hobodave I think that a "real" nerd would laugh at Naruto. This is mainstream stuff.

9:15 PM
hahahahaha

@Mien which means I bathe in money

@Mien, I had them on the 25th.

@Mien which means I have great intuition

why do you keep bullying young and sweet girls? :-(

intuition and sweet young girls?

9:16 PM
@hobodave, does your intuition count for the mac, the combo of greens with vinegar, being a dev, or understanding some of the jokes mentioned earlier (without a proper ref which one)?

@Mien I am not a bully! I was going to question your sweetness but I couldn't make it sound not-dirty.

:o you perv!

hi @JohnLopez

@rumtscho use your mouse :) each was in response to a specific message :P

wow kudos! :)

9:17 PM
I like to lick CUPCAKE

me too
I may treat myself tonight
@Mien am not. I restrained myself

test test

HI Runtsch hi

@Mien fail fail

:-(

9:19 PM
10 test

@hobodave you expect me to move my right hand 40 cm and position a good grip on the lump? I could write so much in this time

how do you link your sentence to another without the '@nick' thing?

opps Do lick cupcakes?or yourself?

did you really just say "grip on the lump?"

that's what she said!

9:20 PM
@hobodave I was referring to my mouse. And yes, I use a grip on it.

@Mien hover over the message you wish to respond to, a small arrow will appear on the right, click it

yes, but when i click that, i have 8616: in my 'chatbar'

"grip on the lump...no use oil slowly hmmm rub it flat

@Mien so, ignore that and type your message

when I send that message, the 8616: will turn to @nick

9:21 PM
right

@hobodave I test again
I want the @nick to be gone

oh, I didn't understand you the first time, my bad

fail fail

can we kick people in the chat btw?

I don't know if that can be done

9:22 PM
np :)

yes

I am trying that too
OK, didn't work.

Mean cooker
or my bad

So, @hobodave, how do you eat baby greens (except in a salad)?

Does anyone have a good B sause

9:24 PM
@rumtscho salad and sandwiches are pretty much the only way I eat baby greens
they have a more delicate flavor than the fully grown ones, cooking is rare. I've never cooked them

Strawberry baby greens

I found them here.
I still have a piece of parmesan to use up.

strawberry white wine reduction .....white pepper and gingar the end (candi ginger

Heh, what happened to my link?
But yes, this one.

9:28 PM
rumscto

it's rumtscho

On the other hand, maybe it isn't such a good idea to eat freshly sprouted greens in Germany right now.
Yes?

I think he's a face typist

lol :p
I thought they knew the source of the EHEC?

No hell no ..fail fail
Thanks great

9:30 PM
@hobodave, do you read fantasy?

@rumtscho I live fantasy
but yes, I read it too

They shut down a farm for it, said it was in bean sprouts.

@rumtsco or anyone

But who knows if this farm was the only one using the sprouts batch?

@JohnLopez you haven't formulated a complete sentence since you've joined the chat. Do you need help with something?

9:31 PM
I thought it was that soy shoots nursery, that was suspected already

But there is this belief which sometimes gets spinned nicely in fantasy novels

I don't eat sprouts

which says that talking about a new idea - often a paranormal being - can create the being out of nothing.
So, @hobodave, I must blame the invocation/creation of the face typist on you.

@rumtscho haha I was wondering where you were going with that

Yes.thank-you n.New to this chat.English second lag share rieciepts lavender ....cake and ice and too spaich need ideas

9:35 PM
@JohnLopez, we don't do much recipes here. Have you tried sites like AllRecipes.com? You can search for "lavender" or other things there.

No thank-you

@hobodave, it looks like baby greens are a form of sprouts which has gotten older than usual. I suspect that both are grown on the same farms.

@JohnLopez I'm afraid your English and typing skills will make it a bit difficult to communicate here in chat. We do have a lot of good questions & answers available under the resources tag
@rumtscho they are completely different imo
baby greens do not contain either the root or the still present seed
they are young leafy greens, that's it

Thank-you .will just read fun food talk.

@JohnLopez happy to help

@hobodave, maybe the taste and the culinary applications are different. But if I were a farm which is equipped to produce one of those, I probably could produce the other without a big change in equipment and process. Which sounds like easy money. Which means that they are probably coproduced.

@rumtscho I'm not sure what your point is

@hobodave, my point was that as long as there is EHEC potential in sprouts, I'll avoid baby greens too.

@rumtscho: wash them and you'll be fine
people with low resistance have a much higher risk

I don't think that's necessary. You can wash baby greens. Baddies don't grow inside them

9:42 PM
(babies, elderly...)

However beans/seeds can house the baddies inside them. Then the growing conditions of high moisture high heat allow them to thrive ridiculously well
You can have a contaminated sprout that no amount of washing will cleanse
but yea raw greens in general will still be more likely to poison you than cooked
but sprouts are like small possibly live tactical nukes

I think that I will just err on the side of caution for the next few weeks

EHEC potential in sprouts can be reduced by growing own sorouts and hers all baby greens.Off site .Five acres on farm co share two B and B .And one full serice brunch and Dinner

I ate some pretty foul things in college

I am usually lax on food safety, but this one is scary
I have given myself food poisoning too.
Not too bad, but I've had some ugly colics for a day or two

9:47 PM
very not good

I would leave pizza out unrefrigerated for 2 days and still eat it

But the usual germs on food don't kill 1/10 of their victims and put another 30% on permanent dialysis

@rumtscho: are there still people getting infected?

Food safety ie sprouts radish .Seem best in raw taste Cleaner if grow in water

Belgium is still EHEC-free, strangely

9:49 PM
@hobodave my parents have an "outer" kitchen. This is like a glassed portion of the big balcony.
It is somewhere in the 12-15°C range for half of the year, because they don't heat it.

but it's like an oven in the summer, no?

rumtscho Please stay so safe.Very Bad .Had with watermelon last summer

And when my mother cooks (and she cooks a lot at once), it gets put there instead of in the fridge
It stays there for about 3 days until it is eaten up.
And we usually don't get food poisoning.
@Mien, it isn't hotter than the rest of the house. It actually cools quicker in the night. But of course, it gets more sun, so heats in the day.

okay, I thought it was like a sort of veranda
Is veranda English? :p

We are getting an airconditioner this summer, but until now, we've lived our continental summers without one.
@hobodave, I looked up Chicago climate the other day. It is a lot like Sofia, only the rainy time is different, in Sofia most rain falls in May.
@Mien, I understand the word. But I am not sure if it is recognized in English or in some other of my languages. I think it comes from a Romance language and has gotten adopted as a foreign word in many others.

9:57 PM
Good to have mother like that.Buy her other fridge .Veranda side room side still part of house.Off the Kitchen is for our Veranda think like out A irconditioner good.Continental summers are Hot .

apparently it is 'verandah'

@JohnLopez, she has a fridge. It is just usually filled with other stuff, and there is no place for the cooked food in it.

but it has a slighty different meaning
am I the only one who thinks he's trolling? :p
