Is there an ideal altitude for assembling an interplanetary craft? As much as possible before it even leaves the ground? Does the rocket equation (or our technology) favor multiple small launches?
 
No, No, and No.
Launching there is a preference to a higher altitude, but it is pretty slight.

@PearsonArtPhoto what would an "image of starlink" be of? One of the satellites? The constellation, the network configuration? When I think of an image of GPS I think of the diagram of the orbits.

Have you checked their patents? If there are some, there might be some artwork there, and published patents are certainly (I think) fair game for talking about and showing.
