My question to you (OP) would be: who is the cake for? If it's for a visitor, that's one thing; if in your house there are only three people, you, and your parents, and the cake is for your enjoyment as a household of three, that's a different thing. There are substitute for eggs, but it depends on the recipe. Bananas, vegan yogurt, oil, certains types of flour, compote, syrup, startch, tofu, potatoes, even gelly (seaweeds). It takes some work or research to find the one that will fit the most to for each desert. My background is middle Europe. Asking for diet could point to weight problems, asking for restrictions could point to deseases. If the OP already fears to implicate problems, I'd just leave those words off. "Which food do you not want to get served" is general and sounds less impacting than a phrase that translates to "do you have to avoid some food due to any issues or health problems". The neutral phrase also includes those that simply don't like the taste of certain food even if there is no serious background. — puck 49 secs ago

This looks like some useful cooking advice, but doesn't have a lot about the interpersonal skills involved, could you add some info about how OP can talk to her mother to make use of these substitutions and information? Interestingly enough, when eating out you may be eating some "vegan" stuff without knowing. Eggs are too expensive to use in commercial, cheap cakes, they use an industrial replacement...similar examples on other foods. @EmC Maybe some rewriting too. I also taught my mother, and often bought some ingredients; however the challenge is having them all the time at home, handy to be used. Or so they say, to be polite. Fact of the matter is that for OP being vegan by choice (or so I understand from the description, correct me if I'm wrong), meaning this is preference, but we all have food preferences, so asking for the entire food to be vegan is asking for everyone to accept OP's vegan preference. — xyz 48 secs ago

@xyz that still doesn't really seem to answer Noon's question about communicating to their mother that they feel hurt by the mom using eggs in desserts? To me, this reads more like a comment on the question or a rephrasing of it into a harsher one (from 'how to communicate I find this behavior hurtful' to 'how to demand my mother cooks vegan food for me')...
