I didn't really do anything on the Exchange server as far as I recall. I looked at things related to some of the early clean up of the active directory, and upgrading to 2008.
I was mostly just making sure it was talking to the AD correctly.

Hrm... Are you getting spammed to death perhaps?
We've tried restarting the mail.que and logs, but it's just being overwhelmed. Server running on a VM, so another question I had was how feasible is it to add more CPU to it.

How many cores do you currently have assigned?

You have 4 CPUs assigned to your VM? How many physical cpus/cores does the box have?
It should be less of an issue then it was in the ESXi 3.5 days, but too many cores can actually cause problems if the VM host, is busy.
we have 4 blades for the group each with 4 (dual core) cpus
