@SirCumference You got to think in terms of 1) the meter; 2) readability; 3) how one would play it. If the meter is 2/2 the 2nd one makes sense, as you want the performer to make the notes sound continuously (as a phrase) as one beat. If the meter is 4/4, the 2 triplets make more sense. Notation convention helps communicate composer intention. Ultimately it's a tool for communication.
Example: Chopin's Fantasie Impromptu. In the left hand, although the meter is 4/4, Chopin beams the notes into 2 groups of 6, even slurring them accordingly, since the left hand is to be played as 2 beats, while the right hand (in measure 12) becomes 4 beats corresponding to the meter although initially in measure 5 it's supposed to be performed as a single beat.
