I wish there were an universal format comparable to .NRT

Is there an way to create .TXT to .MIDI in similar ways?

There are midi to txt converters out there

I think if you do a search for csvmidi it will get you started

If you are doing anything heavier than playback, you may want to look into music xml though. It better preserves data for analysis and the like
