Hey all!! I would be very grateful if you went through some of the songs (if not all ;) )

And let me know your feedback? The instrumentation isn't great (because I'm not good at the digital audio workstation) ... Hopefully it's at a point where I can communicate my musical ideas? I've got a question but I'm afraid it's a bit too specific to really make a good SE question.
I've stumbled across this song called "Journey through sand" here : https://onlinesequencer.net/807798
I like it and as a beginner looking to learn music theory I decided to analyse it, try to understand what is going on and why I like it.
The first thing I tried to do is figuring out a key, which was pretty easy for the melody. I found D# or Eb. Then I tried to figure out the cadence. Which I found to be V - IV - I - IIIb ?! The IIIb really caught my attention here, because it c

Thx for the feedback :) What could be a good title for this ? I'm thinking of "Making sense of out of key chord ?" Should I include the name of the song, since my question is kinda specific and linked to it ? I'd like some insight on why this song sound well in this very particular case, but also learning some broader concepts that I could reuse in the same time
There are already quite a few questions about this for other songs. They are instresting, though I haven't found my answer yet.
