Q: What am I doing wrong that is making my dishes spicier when served as leftovers. Am I not simmering long enough?

DᴀʀᴛʜVᴀᴅᴇʀFor some reason the last three dishes I've cooked seem to get spicer leftover the next day. When they do obtain close to room temp they've all been stored in Pyrex and placed in the same fridge but cooked in different intervals (weeks apart). All three dishes have been cooked in the same 12 quart...

I'm 90% sure we have a similar question, most likely a duplicate. Can anyone find it?

@rumtscho I kind of thought so, too. But I haven't been able to find it. i did find a question re if cooking chilies longer would make them milder, where one of the answers would kind of answer this one.
 
@Cindy hmm, I thought that we had one specifically on hotness levels getting different overnight. Of course, memory could be playing tricks on me.

We tried to do some babysitting while at work. Good that @rumtscho could jump in. It’s always better to hand over to another mod when directly accused of wrongdoings, like today. (Although my conscience is clear.) That was good teamwork. And I am proud of the community for staying calm and not retaliating.

Our kitty's latest thing is to try to open the refrigerator door and meow until we give her some milk.
 
How could I even consider brushing my teeth when his food dish was empty? Imminent starvation! (He’d finished a whole pouch of wet food a few minutes ago!)
@Cindy ouch! Can she handle the lactose?
 
@Stephie Apparently. She even drinks it cold. But we only give her a very small amount, around 1 or 2 tablespoons of low fat or skim milk.
 
Ah.
Ours also seems to be ok with the rare splash every now and then.
 
I'm just glad she can't get the door open!
 
He will always come to check on me when I am cooking, but I can usually go to the fridge in peace. Hubby made the classic mistake of sharing when taking a slice of ham or deli meat out for a snack. I told him...

@Stephie You assume correctly! Re the sharing, this one will not eat 'people' food. Outside of milk, it's got to be cat food, treats, etc. I've tried (stupidly) to share with her, to no avail.
 
Food hierarchy here: 1. Meat, raw. 2. Dry kibble 3. Cheese, dairy products 4. Wet cat food - but it has to be “the right kind”, which will depend on his whim, the lunar phases or some other unknown factors. What was great today will lead to the classic “are you serious?” questioning look tomorrow and be perfectly ok next week.
But I don’t give in. Once it’s in the dish, it’s take it or leave it.
Oh, and I forgot: He will supplement his diet with whatever he catches outside. While he’s on a low-fat-high-protein diet of grasshoppers in the summer, it’s fat mice right now. And I mean fat. He brought one home the other day, apparently too full to eat it immediately. >.<
 
Lol! This one likes variety. You can give her something for a few days and she will gobble it up. Then, you give it to her and she checks it out and looks at you and starts meowing. Then you get that look. So I give her a little of something different she eats both.

@Stephie We don't ever let her out anymore. With her age it just wouldn't be a good idea. But she still likes her window seats (supplemented by kitty steps) and fresh air. Every now and then either hubby or I will pick her up and take her out. But we hold her and don't let her down. I've thought about a kitty stroller.

@Stephie Sorry, too late with the edit. His ejection fraction (heart pumping capacity) only increased ~2-3% and is still dangerously low. He's schedule for surgery Monday to implant a permanent defibrillator/pacemaker.

@rumtscho it's scary, to say the least. The most scary thing is that they have to shock his heart to make sure the device works right. Not sure how many times they do that.
