@MathieuGuindon Just because I remember this from some talk, have you made sure that you do not accept insecure JWTs? There was something with a parameter that can be set to none essentially breaking security. (I think the advice was to always reject such JWTs. )

good question.. I'm validating the provided issuer and audience values, authentication type ("Bearer"), and the token is encrypted with a symmetric key

the JWT is also never stored anywhere, session, cookie, or otherwise: it is materialized off the user principal whenever an authenticated API endpoint needs to be hit, so it's only ever trappable as an encrypted "Authorize" header over HTTPS - at which point if the token is intercepted I'm not sure what more I can do!
