Things like determining the way an impact crater got there is done by measuring stuff then using statistical probabilities to make a conclusion. It's all about the math.
Counting the number of manuscripts and ordering them by date is a lesser scale of measurement. And what makes "enough" of a count to justify a conclusion is subjective, not a matter of probabilities.
The resurrection is vague. First, it's something that's not even typical, so we can't even compare it to anything.
Second, there's nothing to look (measure) at concerning it; just the records. And eyewitness testimony is not as reliable as we'd all like to pretend. Tons of sources for that; here's a random one.
