Because attacking the problem would mean there's something they have to change.

What I see is that the vast majority of the publishers depend on an annual release of the latest Call of Duty, Battlefield, sports game, what-have-you.

And their business model is such that those games are supposed to have limited replay value.

@James The problem with FF7 is that the fanbase is too extreme; they'd alienate a good chunk of their fanbase. They'd make money on the remake, yes, but they'd lose a ton of fans who'd never buy any more FF games, ever.
