An eggplant can be baked or grilled; then you peel it. I read that you have to drain it then (e.g. in a colander), even overnight. What if you don't drain the water-does the taste change considerably? Can you still make spread out of it?
I would add "Please don't use this tag for just any food which happens to not include meat. It is supposed to be used in cases where a vegetarian solution for a problem is not obvious, such as conversion of meat-containing recipes to vegetarian. "

What I don't like about it is that it concentrates too much on substitutions
so if I have a vegetarian stock and I want to know how long to cook it - is it tagged vegetarian. The actual question doesn't really revolve around the vegartian aspect,just how long to cook that stock
