Mine is a very typical Japanese model.
You'd be fine with any of those.

I very rarely cut myself.
But I have found cheap gloves with an EN388 rating of 5.

Even experienced professional chefs routinely f%*k themselves up with mandolins. It's really easy to get ahead of yourself.
