even today there are different texts
 
there were plenty of textual variations before the Uthmaic canon was compiled. that's one reason why it was considered so important to compile it.
but as far as i know, the biggest differences were matters of completeness; different texts would only consist of "most" of the Qur'an, rather than a single text which contained all of it.
also dialectual variations, because not everyone spoke (and wrote in) the same flavour of Arabic.
