I'm thinking about treating myself to a better chef's knife. I've had a victorinox for over 20 years and it's served me well, I want something higher quality and I think I've earned it! I'm thinking about MAC, Zwilling and Wusthof, happy to get feedback about any of those. I'm leaning towards the MAC MTH-80 at the moment.
One thing I've been seeing is dimples, all the top end knives seem to have dimples. I understand they are supposed to reduce sticking, but does dimpling actually work? I'm happy to spend extra for it if it's actually going to help.

@GdD I feel like that's a potentially useful question for the site
I think some of the japanese cheapies had holes in the blade allegedly for the same reason

Q: Are fluted knives a gimmick?

MarkEI haven't been able to find a post specifically on fluted knives, so hopefully this isn't a duplicate. I was wondering if fluted knives actually work. I came across a comment (possibly an Amazon review) that fluted knives don't actually help in preventing vegetables from sticking to the knife --...

Thanks @JourneymanGeek, I actually thought it would be opinion based so I didn't think to ask it on the site. But of course like most questions I have it's already been asked. Although I the answers don't seem to be based on any kind of evidence.

The consensus seems to be dimples are a marginal, but detectible improvement when cutting some things, otherwise no difference at all.

@JourneymanGeek My knife set came with a knife like in the top picture of the answer there, and I rarely use it. Things stick to it just as hard as to the regular chef knife that also came with it.

Eh, they're good enough knives for the kind of cooking I do :P Sharp too, I can do that 'cut through paper while only lightly holding it' trick with them ;)
(That is, if I remember to sharpen them regularly :P)
But I can imagine someone that's used to much better knives thinking "heh, no". OR the dimples not working 'as advertised' :P

mom loves ceramic knives - they come with covers. They're all chipped cause dad refused to cover them up

I'm pretty sure there will be times the parentals will barge in and do things
 
better safe and spend a tenner on a set I don't care about, than "oh snap, dad managed to snap a good knife"
 
To be fair mine kinda did that when I just got the keys and there was loads of DIY-ing to do, but not anymore (thank goodness... I wouldn't like them to barge in on e.g. a weekend afternoon when I decided to have an 'early drink' :P)

But how are you going to make sure dad uses the 'right' one?

What do you use to sharpen? I've been thinking about a knife sharpening kit but not sure what to get.
 
Also, leave the sacrificial knives in the open...
or in an easier to reach place
@GdD we used to have a electric sharpener (I KNOW I KNOW) or a pull through
now we don't bother. That's something I need to look at when I settle in
 
(just an image, no actual shop ;) )
I like mine, easy enough to use, doesn't require a lot of force... and if you get a bit acquainted with it, you can almost 'hear' when you're good.

@GdD personally I’m a fan of Zwilling’s Four Star line - it’s what I grew up using, but they have solid plastic handles that I find comfy and are easy to clean. And my parents don’t particularly take care of theirs super well (they put them in the dishwasher) but the knives are still good. Recently got a few of them sharpened and they work like new.
