1:35 AM
@Pearsonartphoto well, no gossip or drama intended, just trying to resolve a situation

2:04 AM
dangit
(testing something)

2:30 AM

3:03 AM
@rfusca Hahaha!

@Sean make me want to get re-engaged

Looking through those pictures, I wasn't sure how is was going to end.

i think the zombie should have been the real groom-to-be
she turns into a zombie and they married, zombie-style

That's what I first thought from the title.

me too
you U.S. based @Sean?

3:09 AM
@rfusca yeah

just wondering

2 hours later…
5:10 AM
Site is down for maintenance.

sucks

5:23 AM
The site is down (Along with most of SE), and if you click on the blog, the top entry says "The End of the World is Nigh"

2 hours later…
7:10 AM
hello

7:25 AM
@Francesco hey
sorry, didn't see ya

@rfusca np... any problem due to the hurricane?

oh no, not here
not even close to me
or any of my family/close friends
thanks for the concern though

ok that's good
here we still have a very hot day but tomorrow the weather should change

what do you consider 'very hot'

which is good for me, since I'll be back to work on monday and wearing a tie with this weather is not good
very hot is 40 degrees with high humidity and no wind
we don't have 40 degrees NOW but the day is already promising (it's 9.30 am)

7:30 AM
@Francesco gotcha
someplaces are like 'oh no, its in the low 30s!" and its like 'umm ya, thats not hot'

I am thinking about the blog post. Which format can I use to write it offl ine?

Word
we had several days in a row recently that went to 46

@rfusca well we live in a mediterranean country so we know about hot weather and lovely weather
it's been an issue in the mountains because snow was melting and it's dangerous for skiing

indeed

@rfusca don't have office, openoffice can work too?

7:32 AM
I'd assume so
There's a little tool where you copy and paste from word into the tool and then it outputs it correctly.
if you'll give me a email address, i'll set you up with an account and you can play around

mornin' all

wow, you speak this time

There's someone here this time

pokes @Elendil starting to think you were a figment of my imagination
excuses
;)

I am your conscience
Buy me a D3s

7:34 AM
hello @ElendilTheTall

thats a terrifying idea

Or i'll rack you with guilt

esp if my conscience is British
;)

hey Francesco
@rfusca you expecting any trouble from this hurricane?
or too far inland?

btw @Francesco , are you from Italy? or is Rome a new thing?
waaay too far inland

7:36 AM
@rfusca how can I give it to you without walling prey to the various spammers?

email me

@rfusca I was born in rome some 30 years ago and have lived here since then :-)

my username here at gmail

ah Rome
I'd love to visit

@Francesco nice, i'm very very VERY jealous of the food and history

7:37 AM
@ElendilTheTall don't worry there will be a blog post especially made for you :-)

Does it include free tickets there?

@rfusca and that's just for start :)

incidentally, "Essentials of classic italian cooking" is my current book i'm making my way through :)

I'd love to do a food tour of Italy
get a nice little Alfa Romeo convertible

oh my, yes
i'd come back so fat though

7:39 AM
@rfusca italian cooking has more to do with using the right ingredients ! please please refrain from those terrible clones

@Francesco 'terrible clones'?

@ElendilTheTall I am sorry but you are @rfusca conscience not mine so no way to convince me to buy free tickets. You will have to be content with the d3s

lol

@rfusca yes parmesan instead of parmigiano, fake mozzarella, cheap olive oil

7:41 AM
oh right - no, i respect the food too much to do that

That powdered 'parmesan' in cardboard tubes >.<

imported olive oil, fresh mozz, parmigiano regianno (probably spelled wrong), finally found a reasonable price on san marzano tomatos

@rfusca llook my brother went once in ireland and was living in a family, to study english and such.

Making your own mozzarella is surprisingly easy

so to be a nice guest he brought original parmigiano olive oil and such and he offered to cook
and he is a good cook

7:43 AM
@ElendilTheTall (i've been told that, been meaning to investigate)

would you believe that they refused and went instead to eat pre-cooked tesco pasta?

WHAT
wow
thats just

in the end he and his room mate (from Rome, too) ate the stuff that they had brought

wow

what can you do... if you prefer pre cooked pasta which you cook in the mw oven...

7:44 AM
i just...can't believe that

@ElendilTheTall really6? that doesn't fit with what I know (high temperature, need for raw milk and such)

thats crazy

Think I saw it on TV the other day

making some ravioli tomorrow
love making fresh pasta
so few home cooks around here do it

7:45 AM
Have you heard of Bariani olive oil @rfusca
?

@rfusca parmigiano reGGIano is the right spelling :)
@rfusca in any case: well done!

@ElendilTheTall doesn't ring a bell
@Francesco thanks, Italian food is my favorite, BY FAR. So i take my ingredients there very seriously

Californian company, but they sell it nationwide now I believe
mainly to restaurants but also to supermarkets
Lovely stuff

nice

First generation Italians
Oh man, I have so many photos to process

7:48 AM
@Francesco btw,thats in italian lol
@ElendilTheTall i bet
how was holiday?

That wedding I did, a music event, and a holiday
Nice, very hot
averaged about 35 degrees C every day
I've done the RAW processing, just need to do all the tweaks and stuff in Ps

@rfusca I know, it gives you an idea of the complexity of the process
@rfusca check the email

which reminds me, I need to go and export some TIFFs, I'll catch you later

ciao
@Francesco ok, you should have a blog account email

@rfusca no OpenID? :-)

7:56 AM
@Francesco lol nope
hmm reading over some instructions I can read, mozz doesn't sound too hard to make

I've seen that there's a draft section and submit for review, excellent

yup

well from the link which I sent
pour the milk in a cauldron with the "caglio" and keep there for 1 hour at 35 °C
then you break in minute pieces and is poured in hot water (80°C) and is made in threads
you must achieve a correct ratio between fat and proteins
and the right acidity level via the "caglio"
acidification lasts up to 8 hours at a 46°C temperature
now it's ready to be "shaped" and if you have not reached the right acidity you don't have the proper consistency
this is the so called "filatura" which means threading in oblung shapes the cheese
now the cheese is cut (which in italian can be said "mozzare" from which you get the name) and is submerged in a salty solution
this is not something which I would be able to do at home :) you can do some approximation but that's not the real thing I fear :( but if you try please take pics and share the results because I would be interested!

ya, those sound approximately like the directions I"m reading ('caglio' = Rennet )
i'm not reading anything about the 8 hours though

this is the "disciplinare" in italian which is the "official certitied way" of doing it

8:05 AM
sure, of course

it says that the maturation lasts on average 5 hours
step C3 on page 3
ok so now we have become the blog of seasonedadvice :-)

lol
youtube.com/watch?v=FgB-pmwOhbw that looks like about what you said

@rfusca yes it's a good description
I'm thinking about the post. I would like to show you some dawn, afternoon, sunset and night photo
going around the centre of rome and some park
i need a bit of text here and there :)

sure

have to go now see you :)

8:19 AM
ciao

9 hours later…
5:04 PM

2 hours later…
6:51 PM
Hello @Francesco

4 hours later…
11:10 PM
@Francesco this will make you cringe after the discussion last night - my mom asked me to make risotto and gave me canned chicken broth, canola oil, long grain rice, and grated parmesan kraft cheese. i just about broke out laughing
