informally (may forget some aspects) I can think of the following points:

signal is closed source, telegram is open source

@David天宇Wong the predecessing company to current OpenWhisperSystems has been bought by Twitter and they may have made something closed source...

b) Telegram's protocol is completely rolled on their own, Axolotl (Signal's protocol) is based on the well-received OTR

c) (late point) Telegram's protocol has been broken, Signal's not

d) Axolotl uses well-analyzed primitives in well-analyzed ways, Telegram doesn't (see how the authenticate data and that they use IGE)

well I haven't read much about both
