Well, first of all, what do you mean by chameleon?
After reading your question, I reread the book you mentioned (I happenes to have it around)
 
I'll explain why my characters are chameleons

And the authors definition of Chameleon is not necessarily a lying character, but an one who changes and confuses the MC

There are some multiple protagonists, four to be exact (dont know if I will add some more). The point is, they don't know what to expect from want another from time to time, when fights arise, etc and etc. And not even the reader knows
I was curious to know from you why with limited narration (like one from Game of Thrones) the character's thoughts are out of reach for the narrator
I'll edit my question for better understanding, I see your point now

Limited narration is, by definition, a narration on which the narrator is "inside the mind" of only one character and cannot access the thoughts of anyone else
Which, in my opinion, would solve the problem of everyone being "chameleons"

Having more than one POV character should not be a problem as long as you make sure they are NEVER narrating the same scene. "Perspective jumping" within a chapter/section/whatever is considered confusing and very bad styling
As always, you CAN do it
But I don't think you should
Just choose one of the characters to narrate and stick with them
If you really want to change perspective mid-chapter, add a scene break

What exactly is the point of having an omniscient (not limited) narrator if he can't look into the other character's thoughts?
What else would he need to be omniscient to narrate?
Or is it simply an stylistic choice?

At first, it was because I thought there would be no another way to make a limited third-person narrator without showing what he is thinking.
I had an idea that the narrator "talks" to the characters, so that omniscient narrator would be an character-entity
