Right, but if blocks are going to be the main thing of Gutenberg, wouldn't that make shortcodes less appealing to use/create?

Agreed, there are fewer reasons to use shortcodes, but that doesn't mean they won't be supported

GB is nothing more than a UI for shortcodes. But obviously in the good old "nothing is ever deprecated" way of core, you will have both around to force all developers to develop both
