the only thing I can say is this that could work against you
1) ramdisk's default.prop would have ro.adb.secure=1 (meaning its secure, if it was 0, its insecure, so could su from within adb shell) and 2) MTD partitions, is that present on the tablet or some proprietary /emmc/ thingy?
worst outcome, you'll have superuser.apk in the /system/app directory and will show up on the drawer but no su

Wubi is only good for trying out Ubuntu without really installing it. (I.e. the Windows stays there and Ubuntu runs from a disk image file on the Windows partition only)
It's pretty cool though. You can reboot to Windows and uninstall the Wubi app and all is gone
 
I actually want both, as I regularly use windows programs.
But some things I want to do need linux

Thing is: All the Ubuntu data will reside on your NTFS partition
But: Just try it out, if it works, =>fine
And it's absolutely no stress to get rid of it without having Windows problems afterwards...
