@Catija that's one of those wierd cultural things I've wondered about...
there's 2 traditional ways of making coconut oil...
One's from copra - dried coconut flesh that's pressed...
the other is you basically let coconut milk settle, take the 'cream' then render it down...
Which I'm half certain isn't done commercially...
but the smell is a lot even more amazing...

is just.... whaaa?
cause there's generally no oil in coconut milk, there's some natural emulsification
(source - my late gran's house has about a dozen coconut trees in the backyard :D)
