12:00 AM
I'm a bit tipsy :P

Ahh.
Party?

Not really, just an evening out.
But the bartender kept on buying me drinks.
I couldn't treat him back.

Ahhh.
Interesting.

Well, I made him a banana tart in December, but he wasn't there :P

Ah you go way back.

12:25 AM
Yes, I know him for a while.
But I'm off to bed.
Good night.

12:42 AM
@Mien Hahha poor girl.
Standing there was a bad idea.
I am so proud of my country.

I've heard that the Cooking site has a belligerent moderator.
who could it be?

1:32 AM
Hello.
I didn't say anything, aren't you proud?

2:01 AM
@Cerberus YES! Well, not about that. More of actually making it through a whole day's worth of EL&U chat without wanting to gouge my eyes out. Y'all have gotten mellow, or maybe today was just a particularly lucid day.

Kosmonaut has come back.
@Shog9 And I never wanted your eyes; are they really so much more perceiving?

@Cerberus I saw that, very nice.

And what do you mean by "making it through a whole day's worth of ELU chat"? You read all transcripts??

@Cerberus Doubtful. But, an issue was raised on MSO that related to something happening in EL&U chat, so I felt obligated to at least scan them.

Oh, the Persian thing?

2:08 AM
Yup
Tempest in a teapot, so far as I could see.

I personally didn't think it was a big deal.
Agreed.
Sim was discussing it just a minute ago.
She flagged the Persian.

Ah. There's been some past... Sensitivity there.

And Sim and Gigi are, let's say, equally passionate about certain things.
Did you see how Jeff was cursed at by some newcomer?
And how mildly we reacted?
Kosmonaut's return, even if it be temporary, healed some wounds.

@Cerberus Yup

I don't think much else happened.

7 hours later…
9:25 AM
Is this the place to talk behind people's back now? :P

2 hours later…
11:03 AM
@Sobachatina are you here?

6 hours later…
4:41 PM
@Mien Nope. That was yesterday. You missed it.

2 hours later…
6:35 PM
Home-made hamburgers are so good!
And you can have them with a yoghurt-mayonnaise sauce (and ketchup).

@Cerberus Yes. I like to grind bacon and chuck roast together, right before grilling. So juicy!

Oh, that is even better. I'm afraid I just bought (supposedly animal-friendly) hamburgers. But I fried them myself? I I added all the stuff that goes with them.

What is an animal-friendly hamburger?
My dogs consider any form of hamburger to be animal-friendly; I'm the unfriendly one for keeping them from it.

Heh. There are other species of animals involved in hamburgers, you know.

I don't normally consider E. coli to be a proper animal

6:44 PM
Hamburgers aren't made out of tofu at the supermarket.

They're not made out of ham either. Supermarkets are just full of lies.
Which is why I grind my own burgers

Possible.
As long as I can trust my supermarket that they come from Hamburg, I'm OK with it.

That said, there's a great little burger joint nearby that serves locally-raised beef cooked to just pink in the middle. I love that place.

Nice, but...
Fancy hamburgers sold in burgers bars that indignantly tell you that "of course they don't serve fries" are usually very expensive here.
€ 8, I think, at the Burgermeester.

Ah, that's sad.
These do tend to run about $7-8 a pop, but they're huge - and the place does serve (and cut) very good fries.

6:49 PM
Would that we had that here.

Well, if you can get a few pounds of chuck and a cheap meat grinder, you can do it up yourself for a lot cheaper.
Hardly pays to make your own fries though, unless you're deep-frying something else
I only do it when I'm batter-frying fish

@Shog9 Why not? I always make my own fries!
It's pretty easy and quick.

I hate dealing with a pot of hot oil

1. Cut potatoes in some pieces that look remotely like fries. Flemish fries are bigger, so that's easier. 2. Fry them in a regular frying pan with some oil (but not a lot: say, thrice as much as when frying vegetables or something), on high heat, for about 10–15 minutes.

ah... That's not the same though.

6:56 PM
No deep-frying needed, and I find the result better than when buying them on the street.
They are pretty much the same. Taste the same, look the same, more or less. If there is any difference, it is subtle, and this version tastes great.
I used to deep-fry home-made fries.

it's good, don't get me wrong, but something about deep-fried potatoes

I do add plenty of oil, don't get me wrong.
More than with normal fried potatoes.
Not sure how much exactly.

you might be doing something closer to a, uh... shallow deep-fry then? I've not tried that.

Yes.
But (nearly) all the oil is absorbed in the end.
It's very quick and easy.

I have a deep cast-iron chicken fryer that'd probably work without getting too messy.

6:59 PM
Just stir a few times.
My method works in any cheap frying pan.

@Cerberus see, that's what I like about deep-frying though; the fries don't really come out greasy
crispy on the outside, fluffy in the middle

Mine are just as (non-) greasy.
@Shog9 Exactly that.

hmm...

Try it, then.

I'll have to experiment more with this.
I've stuck with oven fries (wedges tossed in oil and seasoning and baked) and deep-fried potatoes

7:01 PM
Let's say you use so much oil as to just not cover the whole (horizontal) bottom of the pan when cold.
Oven fries don't really get crispy, in my experience.

if you pre-cook them, coat them in oil, and then bake them hot they do ok
but it's not the same

And pre-cut "fries" that you have to fry at home are low quality. Cutting your own potatoes is worth it. I don't remove the skin, btw, but you can (I like the taste of fried skin).
You also need no pre-cooking my way.
Just make sure the fire is at maximum heat.
(On a normal gas stove.)

yeah, I always stick with fresh potatoes. For deep-frying, I'll chill them in a bowl of water for a while first - seems to produce fluffier insides.

I like ease of use and speed.
I could have delicious fries here in less than twenty minutes.
Hmmm...

lol

7:05 PM
Why not...
Fries belong with hamburgers, don't they?

well, see - you have the burgers, you should do the fries
yup

I guess so....
First let me add up the calories I have eaten so far today.

and you have your yogurt-mayo and ketchup, which is good with fries as well

Already finished that.
But I could make more...
Bought some mayo today. Best we have in my country, it is actually a Belgian recipe.
€ 3,90 a jar.
Totally worth it.
Hmm turns out my hamburgers + buns e.a. are only 330 kc apiece!
Probably because I made each hamburger flatter and larger, and then used only one half a hamburger per bun.
So each hamburger was only 70 grams.
Hmm I have 500 kc left for today...
And I ran off about 800.
I may make fries later.

3 hours later…
10:41 PM
@Mien well, you were going to introduce us to the wonderful world of Belgian cuisine... so, there must be something. Like, maybe Belgium has special dishes that don't get stuck in mustaches? ;-p

1 hour later…
11:59 PM
"leetle grey cells sweetbreads"?
