As per the recipe, the meat is put in a medium hot pan without any oil or water to sear. I just stir the meat around to sear as instructed. I've been told the pan is supposed to be non-stick but meat and stuff does stick to it, albeit less than something like a cast iron pan I guess.

Woohoo! I was just gifted with a good four pounds of moose rib meat! I think moose stroganoff for dinner tomorrow.
