@Stephie Sounds like a good idea, but I haven't had good experiences before doing the overnight rise.
@Stephie ca. one hour.

@Gigili if you do cold raise, an hour is enough, assuming you aren’t going for three-pound loaves.
Hi!
Haven’t seen you in a while - everything ok?
@Gigili how about the even more forgiving one-to-three-days kinds? Think “Artisan bread in five minutes a day”.
Have you used tried and tested recipes or just winged it? I do the latter now (winging here means “use ratios and a bit of gut feeling”), but there are good sources available for the former.
Biggest trap in my experience is the yeast ratio - at least when looking at random blogs on the Internet.

3 hours later…
1:13 PM
@Stephie Oh hi Stephie. I was busy with the relocation process, moving to Berlin!

@Gigili hey!
You sure are seeing the world!
What was it before? Belgium?

@Stephie I tried once or twice, not a big fan of retarding the dough because of the flavor (contrary to popular belief)
@Stephie Iran!
@Stephie Haven't tried that one
@Stephie You mean to refer to Berlin as a multi-cultural cit or what?
Lots of pinging there!

Yeah, I hear you! LOL!
No, I must have gotten confused - someone was in Belgium for a while. I guess I am getting old.

Belgium, or more specifically Bruges, was once our travel destination.
I once had a conversation about it with someone from Belgium in this very chat!
If that is what you are referring to

Ah. I remember something food-related.
Was it Cerberus? (From the Netherlands) Or probably Elendil the Tall from the UK?
Ok, so my brain is only half-frazzled. Phew.
I saw your post in the German SE chat, btw. But I rarely go there any more (too busy with other stuff), and if I do, I just read bits of the transcript.

1:31 PM
@Stephie No need to thank me to help you think more positively about yourself!
winks

Oh, no, it was, wahhhhh, can’t remember the name, but I know whom you are talking about. Italian family background, lives in Belgium.

@Stephie I don't recall the name, but someone from Belgium, probably female!
@Stephie Genau!
Found it, "Mien"

Riiiiiight!
I was thinking about Fabby.
Compared to then, the FP has become really quiet lately.

Yeah, there were four of us in the German SE chat as frequent users but they lost interest, apparently
Who is to blame? Probably smart phones

Life has a tendency to get in the way - some change jobs, grow a family or finish their studies.
I don’t think it’s the smartphones, if anything, they make it easier to participate.
