Hello =)
So I've decided to bake our daily bread since we liked non of the breads from our nearby bakeries
So far I only baked tortilla because it doesn't need to proof and I am short of time
What other type of breads do you suggest?

I prefer a quick and easy recipe because I must do the whole baking in the morning before heading to work
 
soda bread wouldn't need proofing, or yeast.
 
I've tied adding spices to the tortilla dough for a change
I could only bake flat breads under the above aforementioned, right?

@Gigili go for slow and cold rise overnight. Let your dough come to (sort of) room temperature while preheating the oven and the stone. Bake. Works with loaves and - particularly handy - with rolls. Rolls can typically go straight in the oven, and being “pre-portioned” are also great for packed lunches.
Many low-yeast breads will happily do the bulk raise in the fridge over days, that means you can make a big batch (no knead, usually, which again saves time!), then take a part of it, shape, proof, bake.
What’s the largest time span you can manage in one block?
