I also considered Cyprus and Rhodos, but we really are zeroing in on Kos cuz our Italian friends keep going there every year and they have only good things to say.
 
To be honest, all of the islands are basically gorgeous. They all have more or less the same landscape and they're in the same sea. The only way you can go wrong is by choosing very popular ones. They'll still be pretty but also packed and overpriced. The island next door will be equally pretty and not packed.

If you go for April, I would recommend the islands on the other side of Greece, next to Italy. They are absolutely verdant with flowers and gorgeous in Spring.
Also, the Easter on Corfu is very interesting from a folklore perspective. Quaint and picturesque come to mind.
