Are you saying that due to the sounds in english, rhyme is a much more distinguishable and enjoyable feature. Whereas with Japanese due to the flat sounds, it's not as enjoyable.

I can't answer the question of "why" exactly, I can only suggest language features that might be related
could it be due to lack of influence rather than sound issues. I read that rhyme originally came from Arabic, when the arab Islamic empire spread so did its influence during the medieval times, as a result of which rhyme influenced European, English poetry etc. I could be wrong but I read it and I do know Arabic is a rhyming language as far back as we know.

I just think it's a bit more natural for rhyme to be a prominent feature in languages with more complicated phonotactics
