anybody here ever try to make a rice for sushi without buying sushi rice, i have a short grain rice i kinda wouldnt mind cooking up

Be sure to use kosher salt or just over 1/2 the amount of table salt. The first comments to the recipe make that clear.

Thanks out to Jefromi on advice to get profiles merged. Looked silly having two with the same name and the way they seemed randomly linked. Thanks all around to mods and most members for the way the site is run. Having tried admin duties elsewhere before: You are all far better than me with dealing in a fair and reasonable manner.

@Catija but yes, I agree that they need to think about how they will ask people to support their answers, and what they will do about cases where people try to cite blogs etc that are cherry-picking studies, and what they'll do about questions where multiple people post conflicting answers, with or without evidence
and realistically, the answer probably can't be anything but "we have no idea, that sounds impossible to deal with"

Yeah. The problem for me is that nutrition is an actual field but a lot of things a nutritionist probably wouldn't consider part of their field would potentially be covered on that site.
@Jolenealaska what have you filled your lemon macaron with? I'm hoping to use something other than buttercream.

@Catija limiting it to things a nutritionist considers part of their field probably doesn't even help, because it's still going to get answers from amateurs
 
@Jefromi Sure but that's where voting and deleting comes in... if it's not supported by data, it doesn't stay. Cooking is pretty lax when it comes to requiring anything more than personal experience... which is fine since sometimes that's sufficient... but if you're trying to be a more scientific site, you need to back up your answers.
 
@Catija It's very optimistic to think that voting and deleting will actually work for things like that.
Nutrition is full of, perhaps dominated by, questions which have data to support multiple widely-held, conflicting viewpoints.
People can have completely unproductive arguments even when they are providing evidence.

@Jefromi It's only optimistic if I think the site could ever succeed... which I don't. If it's truly a matter of scientific nutrition, I would think it'd be on topic over on health, where dietetics is on topic.
 
My point is you said "the problem is [a slice of the scope]" - but I'm saying, I think the core scope is problematic, even if there's some that's worse.

Oh, yeah. That's definitely true. I'm sure that if you go to three different dietitians they'll all give you different recommendations... we still can't figure out if cholesterol is good or bad.... or if there's "good" and "bad" cholesterol... and which camp do eggs fall into... is gluten killing us?... blah blah blah.

Yeah, but it's worse, because it's not just professional disagreement, it's amateurs armed with a study that supports their view.

the studies themselves are often totally fine, it's the conclusions drawn by amateurs that go off the rails.
 
That's fair. I've seen a lot of clickbait articles circling Facebook that take a tiny chunk of a study and make it out to be the main point... and then miss the entire findings.
