the filling is seasoned cream cheese and an egg yolk (unbroken and runny). the sauce is a Spanish seasoned smooth sauce with chorizo and tomato. I'm garnishing with Cotija cheese and cilantro.
I have my camera and tripod out of hock, so I'm also going to try to take some nice pictures.

it is good, I made a test batch just last week and still have some sauce left over.
I think I'll even get Marv to help me roll out the pasta. It's easier if you have a helper (or a motor) to keep the rollers going, leaving the cook with two hands to manage the pasta dough.
