Yep, that's this guy too (cocoa). He has a whole little class for this loaf, I like that. But the light and dark start with sourdough in that recipe, so I think I might try that.
I ruined my sauerkraut, so I've got plenty of time to grow a starter and make a test loaf.
Leave it to me to get Drano into almost completely fermented sauerkraut.

ok, so the best dark rye I've ever had...
 
you take some day old bread. Tear it up like for stuffing, then roast it until it's almost black (but not too hot, you're caramelizing it, not burning it)
then you soak THAT in coffee, add some cocoa powder and molasses for sweetness
the key is to just use enough coffee to dampen the crumbs, and cocoa for bitter/earthiness, but not enough that it actually tastes like either
 
So you add that to the same dough as you're using for the "light rye"?

I did Kenji's pan pizza in Grandma's cast iron not long ago...I'm spoiled for life as far as pan pizza goes.
CN and I each got different crusts and sauces, so I'll get to try 2 of each.
They're just around the corner and for $10 unlimited toppings, the price sure is right.
I'm eating with CN (his apartment is on the way) so it'll be later before I'm at the 'puter again, but I'll be sure to write a thorough review!

2 cups white lilly self rising flour, 1 cup buttermilk, 1/2 tsp sugar, 6 tbl butter. SO GOOD
i tried a different technique for the butter and i'll never go back to shredding in the freezer I think
I melted it, let it come almost back to room temp and there poured in a small stream into the ice cold butter milk. As it hit the buttermilk, it formed little solid chunks. Then I folded into the flour gently. dumped on the table and cut out the biscuits. Easiest and least fussy I've ever had - and the best results.
my biggest problem now is that I can't stop eating them

I am quite pleased with the pizza I had for dinner from Pizza Studio. It is nowhere near the best pizza I have ever had, but the price sure is right.
I promised a review of sorts:
I had the Rosemary Herb Crust, CN had the traditional. The Rosemary was much better, I'd never order the original having had the rosemary. Next time I'll try the "firecracker". They have a gluten-free too, but I'm not interested in that.
Usually, pizza is best with just a few toppings. This place is an exception. Unlimited toppings for $10 per pizza? Go nuts.
The website advertised a "Moroccan" combo, but that isn't actually available here, so I came as close as I could choosing individual toppings (plus a few).
So I had this:
That is a good combo.
No tomato sauce, but I did have fresh tomatoes as a topping. They were sliced very thin, so they didn't sog up the pizza at all.
1/2 of the pizza was a perfect sized dinner.
I don't know yet, but I suspect that a slice will reheat nice and crispy in a 425F oven. I'll know when I have one for a midnight snack.
The toppings were really very good. The zucchini was a standout (long sliced, very pretty), as was the sausage. It wasn't spicy at all, but it was very tasty.
The crust was very thin, which I liked, but a bit soggy. I think it's going to reheat nicely.
I tasted CN's pizza, and was less impressed with the "normal" sauce than with the pesto.
All in all, this place is a bargain. With a Groupon, $10 feeds two for dinner, and it's not bad.
The website makes it super-easy to order:
I had to laugh when I typed in my Zip Code. I could choose the place right around the corner, or I could drive 2025 miles or 2028 miles to eat with @Aaronut or @Jefromi. Those are the three options that came up. I chose here; if I had chosen one of the other two my pizza would have probably been cold by the time I got it home.

Cats are different, so this particular cat had us puzzled.
Nothing showed up on the x-rays, but the cat was dying of what looked very much like "ate a big foreign object".
We went in.
After the surgery, the doc called the owner.
"Is Barbie missing a purse? We found it."
 
someone I know had a cat that was ill for weeks
they tried all sorts, it kept getting worse
then they took it to a different (evidently better) vet, who checked its mouth thoroughly, and saw some string wrapped around its tongue
turns out, it had eaten some butchers' string from around a joint of meat in a bin, it had got wrapped around, and was strung all the way through from the mouth to the anus
literally, the cat had string poking out its ass
 
That happens a lot with Christmas Trees. Tinsel.
